Highly
resistant to light oxidation, change pH and microbiological attacks. Very stable toward heat up to 130
Centigrade degrees, but unstable above that temperature. |

APPLICATION |
Food
industry: dairy desserts,
processed cheese, ice cream, jams, sauces, processed meat,
confectionery, snacks, alcoholic beverage, baked goods. The FDA list the
carmine among the colours permitted in food without limitation and exempt
from certification. |

CONSERVATION |
Two years at normal temperature. Stores in a cold and dry location (5° - 15°C). No refrigeration needed. Prevent from humidity. |
