DESCRIPTION |
It is the
purest free colouring matter Carminic
Acid with a concentration not less than 96%, obtained from a successive
crystallisation of a cochineal aqueous-alcoholic extract (Dactylopius Coccus
Costa), after eliminating proteins, resins, fats ans waxes. It is free of proteins
and metals like calcium and aluminum.
This is the difference with carmine. |

USE |
It is used
as colourant in foods, drugs, cosmetics and also as a raw material for acid
stable red colour production. Its protein free characteristics makes this
product suitable for applications where allergenic reactions are not desired. |

SOLUBILITY |
Carminex™ Acid 96% Protein Free is 100% soluble in water in all range of pH, in alcohol and
propylene glycol.

STABILITY |
Highly resistant to light oxidation, change in pH, microbiological attacks. Very stable toward heat up to 130
centigrade degrees, but unstable above that temperature. |

APPLICATION |
Food Industry: jams,
sauces,
confectionery, alcoholic beverage, soft drinks. The
FDA list the carmine among colours permitted in foods, without limitation and
exempt from certification. |

CONSERVATION |
Two years at
normal temperature. Store in a cold and dry location
(5-15ºC). No refrigeration
needed. Prevent from humidity. |
